I just received the vitalis steamer. A few notes for potential buyers:
- at a little over $160+, this price at Amazon is the lowest you will find for the large size (there is a smaller version that is suitable for 2 people)
- the unit is hefty and appears to be made of quality steel
- the unit is NOT made in Germany as the description says; instead it is made in China which is disappointing especially in light of the price they are charging
- the steel is dull looking (I have noticed that Rosle and WMF items made in China appear like this; whereas Fissler which is still made in Germany is beyond compare)
- the inside is not as big as expected for 4 people, maybe 2 or 3 if you want to fit food in there comfortably
- there are 2 trays provided - a large one and a small one. The steamer can hold 2 of the small trays and 1 of the large trays, or 2 large trays. It's no surprise that WMF sells the small and large trays individually for over $30+ each! I can tell you that based on the quality and price of the trays, they are not worth buying
- the great thing about this is that the steamer is rectangular; not round as most steamers are. You have more room to play with the types of food you can steam
- there is also an instructional booklet included which gives you tips on "broths" you can make to steam food with
Overall, this is a good product, if a tad over-priced.

My grandmother and my mother both used pressure cookers frequently. When I was younger, one of the first kitchen items I purchased was a pressure cooker of my very own (a Hawkins Futura jiggle-type, which still works perfectly).
Recently, I decided to purchase the 7 liter Kuhn Rikon, primarily because it is larger than my Futura. Some other reviewers have noted that the Kuhn Rikon requires more monitoring than jiggle-type pressure cookers. This is only somewhat true. Jiggle-type pressure cookers release steam throughout the cooking process. This provides confirmation that the cooker is operating through sound. It IS convenient if this is what you are used to. However, these cookers require more liquid to achieve pressure and as a result, certain items can come out more watery than I prefer. You can boil away the excess liquid after releasing pressure, but then you lose some of the time saved.
The Kuhn Rikon uses an advanced enclosed system. As a result, the "sound of pressure", or hiss is missing. A small valve with two red lines provides confirmation that half and full pressure have been achieved. At this point in the cooking process, you must turn down the heat to maintain pressure only; if you leave the heat on high, pressure will continue to rise. Without sound to guide you, one must rely on visual clues. The Kuhn Rikon makes it easy. But, it IS different than listening for the hiss.
The first few times you use the cooker, you will need to determine how far to lower your cooktop temperature to maintain the pressure in the cooker. This does require monitoring and a little guess work. However, once you determine how your cooktop and pressure cooker interact, it is the same every time. From that point on, you simply wait for the red line to appear and turn your cooktop down to your pre-determined setting. Set the timer and you're almost done. Easy. In addition:
1. The enclosed system is virtually silent;
2. The enclosed system allows fast, high temperature cooking without heating up your kitchen;
3. The benefits of a lower liquid requirement to achieve high pressure can not be overstated.
The Kuhn Rikon system is different but produces superior results. For those who possess even a modicum of patience, I highly recommend this pressure cooker.

I had a Kuhn Rikon and still have a Presto pressure cooker. I got rid of the Kuhn Rikon. I love the Fagor Duo. The Kuhn Rikon design is a real pain if you have an electric stove. It is probably almost acceptable if you have a gas stove. The Fagor models work equally well on either type stove. Also, along the same lines, the Fagor and the Presto designs are much more forgiving. You better plan on watching a Kuhn Rikon very closely -- especially on an electric stove -- but also on a gas range. It can get to an over pressure situation easily. Granted you will likely just blow out part of your gasket (the safety measure) if you get distracted. Who needs that? You better have an eagle eye and fast reactions to maintain a reasonably constant pressure inside your cooker with an electric stove.
You do lose some steam with a Fagor though typically much less than with a Presto model. (You lose nearly no vapor with a Kuhn Rikon -- that is about their only big selling point in my book.) The Fagor model uses a compressed spring to regulate pressure. The Presto uses a weight on top of a vent pipe -- this combination is called a jiggler valve -- to regulate pressure. To regulate pressure with a Kuhn Rikon you basically watch a rising spring loaded pressure indicator and adjust the heat as needed. Gas heat is more quickly adjustable than electric. You have to either hope for the best as you crank the heat up and down with an electric stove or play hop scotch between a too hot and a too cold burner. On the Fagor Duo there are two spring compression settings. You can cook at 8 psig or 15 psig. 15 psig is the normal setting used for most pressure cooking. For delicate foods, like fish, or if you are in no particular rush the 8 psig setting will come in handy.
Bottom line is I like the Fagor the best of the three pressure cookers I discussed, next I like the Presto. The Kuhn Rikon is built like a tank and it is an interesting design. I just don't like it as well as the Fagor's and I am a both a mechanical engineer and I cook for a hobby. I'd like to think my opinion is an informed one.

I am a first time user of any type of pressure cooker so was a little afraid of the old stories of pressure cookers. However, that fear is all gone. I had no trouble what so ever following the manual that came with the Presto stainless steel electric Pressure cooker. It is so easy. Just follow the directions. Have cooked several times with it already. Food was great. I have even cooked one of the recipes. The only thing I would suggest is brown your meats in an alternate pan as it does have a tendency to stick to the bottom of the cooker. Bottom line is I would recommend this product. The sealing ring fits around the inside rim of the cover and forms a pressure-tight seal between the cover and the body of the pressure cooker during cooking or canning. When installing a sealing ring, work it into the cover in four small sections, for example, top, bottom, left and right. Work it into the groove a small section at a time until it is fully in place. Place the cover on the cooker body. Put one hand on the top center of the cover and push down firmly. Open and close the cover several times.The 09936 sealing ring fits both the 4- and 6-quart stainless steel cookers and 6-quart aluminum cookers.

.....I am a longtime cook, skilled with old aluminum Presto pressure cookers. I received the Fagor Splendid 2-in-1 cooker as a requested gift about 3 years ago. My biggest complaint after a couple years of use was the fancy V-cross-section gasket, which stopped sealing properly after about a year of use, and is pricey to replace. 2009 update: Fagor has switched to a much longer lasting grey gasket (the early ones were turquoise) that seals better. I bought one a couple of years ago and it is still going strong.
.....I hardly use the shallower pan from this set, but the deep pan is wonderfully useful. It's stainless steel, not aluminum, so I don't worry about aluminum getting into the food. It's got a nice heavy bottom, and so is good for deepfrying and popping popcorn as well as pressure cooking. The tall capacity is nice, I can parboil a whole chicken before roasting it, without clogging the vent.
.....The complex safety features are kinda tricky to wash, but this is definitely a useful pan; it does a great job of hurry-up cooking. I am at a mile altitude, so a pressure cooker really is needed frequently in my kitchen.

We purchased this cooker based on the recommendation of a Cooks Illustrated review, and we have not been disappointed at all! The 10qt capacity is just what we need for big soups, and the 2-level pressure system offers good flexibility in terms of cooking times and tenderness. We made a fabulous, tender and juicy braised short rib dish in less than 2 hours from start to table- not a bad deal!
2008 Update: We still use this cooker and are still very happy with it! Just don't overfill or you will be picking herbs out of the pressure spout :-) I have also posted a review on TrustedOnes.com (http://www.trustedones.com/listing/view/bbSzZgRY8r3yXhaocbDfzs)

This is a very high quality, heavy weight canner. It practically screams, "Industrial strength!" The slide clips and screw-downs securely fasten the lid to the pot. No blow-outs with this baby. The weighted pressure gauge makes operation almost foolproof. And no gasket required! Before purchasing a canner, I did a lot of reading in the rec.food.preserving news group. I saw endless inquiries about sources for gaskets for canners ranging from a few years old to many decades old. It was clear some of these people had spent many, many hours in search of a gasket. Avoiding the need for a gasket became a major criteria for my purchase.
I've had my canner for a couple years and am still impressed with the quality. There are only two negatives I can think of. The heavy weight of the canner is a plus for strength and longevity, but it can work against you. The canner weighs 20 pounds when it's empty. Unless you work out regluarly, you're not going to fill the canner on the counter and then carry it to the stove. The other potential negative is the height. This canner requires at least a 16 inch clearance over your range. If your range has an upper oven the canner might not fit.

I bought this cooker 6 months ago from amazon for $35, and frankly, although the reviews I read on this product all said that it's great, I was very skeptical about the $35 price tag and was not expecting much. On top of that, both my mother and my mother-in-law warned me that cheap pressure cookers are dangerous, and I *must* buy something more expensive for safety reasons. I am just very glad that they were both wrong!
This is definitely one of the best purchases I have made on amazon. I still cannot believe they sell this for $35! The pot does not feel cheap at all. It has very sturdy handles, and a thick, heavy bottom, which holds in heat well. I like this pan so much that sometimes I use it instead of my skillet to sautee meat, because of the deeper pot + the cover, less cleaning up for me :-)
I love making soup and stock, but it usually takes up so much of my time when the stock is simmering. With this pressure cooker, I can make a meat-fall-off-the-bone soup in an hour!
Some might find this pot to be a little on the small side, but this pot works great for my wife and I. Although we have guests over regularly, I find the capacity of the pot to be very good. I would guess that this pot would work well for up to a 4-person family.
Pros:
=====
- Cheap, at $35, it's hard to beat
- Sturdy, I was afraid that the plastic handles would break easily, but they are in fact quite strong
- Stainless steel makes it great for browning meat pieces for stew or stock, and it heats up fast and holds heat well.
- Safe, you cannot open it when it's pressurized.
- Dish washer safe, though I prefer to wash it by hand.
Cons:
=====
- The handle can be tricky to hold with one hand. My hands are small, and when you've closed the top, the handle is kind of big. Luckily, I don't need to do this very often, and when I need to move it around, I just use both handles.
- The top cap can be tricky to clean. I usually soak it in hot soapy water, and then clean it thoroughly with Q-tip.
Watch outs:
===========
- The handle curves in a way that it catches any dripping liquid, I've hurt myself once when I wasn't careful at opening the cover.
- Do *NOT* remove the cap while it's blowing! The steam from inside is extremely hot and as soon as you remove the cap, the hot steam will shoot up faster than you can move your hand(s) away.
Tips:
=====
- I keep some water bottles in my freezer, and when I need to cool this off in a hurry, I can make a bath of cold water in my sink, put the hot pot inside, and throw the froze water bottles in. This usually cools it down very fast, great when I want to refrigerate it overnight to skim off the fat, and didn't want to wait too long for it to cool down.
